Strawberry Cheesecake Breakfast Trifle - Ballerina Farm

INGREDIENTS

  • ½ cup Greek yogurt
  • ½ cup cottage cheese
  • ¼ teaspoon vanilla extract or vanilla bean paste
  • Pinch kosher salt
  • 1 scoop Strawberry Crème Farmer Protein
  • 6 ounces fresh strawberries
  • 2 sheets graham crackers

DIRECTIONS

  1. To a blender or food processor, add the yogurt, cottage cheese, vanilla extract, and kosher salt. Blend until smooth, then continue blending for another 60 seconds to whip extra air into the yogurt mixture.
  2. Remove about half of the mixture and set aside. To the remaining mixture, add the strawberry protein powder and blend until combined.
  3. Dice the strawberries and crumble the graham crackers, then assemble.
  4. Add a small layer of graham crackers to the bottom of a 16-ounce jar, top with a handful of diced strawberries, then add the vanilla yogurt mixture. Top with another layer of graham crackers and strawberries, top with the strawberry protein mixture, and finish the trifle with the remaining graham crackers and strawberries.
  5. Refrigerate for at least 30 minutes, or overnight.
