SIMPLE TOMATO SAUCE

INGREDIENTS

  • 1 (28-oz) can crushed tomatoes
  • 1 onion, finely diced
  • 6 cloves garlic, smashed
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon sugar
  • 2 tablespoons balsamic vinegar
  • Salt and freshly ground black pepper, to taste
  • Small handful of fresh basil, torn

DIRECTIONS

  1. Heat the olive oil in a medium pot over low heat. Add the diced onion and sauté gently until soft and translucent, about 5–7 minutes.
  2. Add the garlic, oregano, and thyme. Cook for about 2 minutes, until fragrant.
  3. Stir in the crushed tomatoes and simmer uncovered for 25–30 minutes, until slightly thickened.
  4. Add the sugar and balsamic vinegar, then season with salt and pepper to taste.
  5. Remove from heat and finish by stirring in the fresh basil. Set aside while you prepare the meatballs.


CLASSIC BEEF MEATBALLS

INGREDIENTS

  • 1 pound ground beef
  • 1 large egg
  • 1½ teaspoons salt
  • 1 onion, grated
  • 2 cloves garlic, minced
  • 30 g breadcrumbs
  • 30 g grated Parmesan cheese

DIRECTIONS

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the egg, salt, grated onion, garlic, breadcrumbs, and Parmesan. Mix until well incorporated.
  3. Add the ground beef and gently mix just until combined—avoid overmixing.
  4. Form the mixture into 1-ounce meatballs and arrange them on a sheet tray.
  5. Bake for 10–15 minutes, until cooked through.
  6. Transfer the meatballs to the tomato sauce and simmer gently for a few minutes to finish.
  7. Serve over your favorite pasta or enjoy on their own.
