SIMPLE TOMATO SAUCE
INGREDIENTS
- 1 (28-oz) can crushed tomatoes
- 1 onion, finely diced
- 6 cloves garlic, smashed
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 tablespoon sugar
- 2 tablespoons balsamic vinegar
- Salt and freshly ground black pepper, to taste
- Small handful of fresh basil, torn
DIRECTIONS
- Heat the olive oil in a medium pot over low heat. Add the diced onion and sauté gently until soft and translucent, about 5–7 minutes.
- Add the garlic, oregano, and thyme. Cook for about 2 minutes, until fragrant.
- Stir in the crushed tomatoes and simmer uncovered for 25–30 minutes, until slightly thickened.
- Add the sugar and balsamic vinegar, then season with salt and pepper to taste.
- Remove from heat and finish by stirring in the fresh basil. Set aside while you prepare the meatballs.
CLASSIC BEEF MEATBALLS
INGREDIENTS
- 1 pound ground beef
- 1 large egg
- 1½ teaspoons salt
- 1 onion, grated
- 2 cloves garlic, minced
- 30 g breadcrumbs
- 30 g grated Parmesan cheese
DIRECTIONS
- Preheat the oven to 350°F.
- In a large bowl, combine the egg, salt, grated onion, garlic, breadcrumbs, and Parmesan. Mix until well incorporated.
- Add the ground beef and gently mix just until combined—avoid overmixing.
- Form the mixture into 1-ounce meatballs and arrange them on a sheet tray.
- Bake for 10–15 minutes, until cooked through.
- Transfer the meatballs to the tomato sauce and simmer gently for a few minutes to finish.
- Serve over your favorite pasta or enjoy on their own.
