If you step into our dairy, the first thing you’ll notice is the calm. There’s no rushing or noise. Just warm wood, steady movement, and blissful cows going about their day.
It’s downright meditative at times.
This is where our milk begins.
Our cows spend their days grazing pasture when it’s nice and resting indoors when it’s not. In warmer months, they wander into the barn on their own schedule, and in winter they stay warm and well-fed on a carefully balanced diet. The milk they produce is A2 A2 certified and exceptionally fresh, often reaching your kitchen just days after it is collected. Calm animals make good milk, and it’s a difference you can taste.
Our dairy was modeled after a traditional Danish dairy that Hannah and Daniel experienced while traveling. Skylights overhead and big windows that open to fresh air when the weather is good. The space feels grounding, even on busy days. In the center of the barn, there is a loft that overlooks the space. Here we observe the peaceful bustling of our happy dairy cows and the magic of making milk.
Nothing on the dairy is wasted. Manure is composted and returned to the land, where it feeds our gardens and greenhouses and supports the next cycle of growth. It is a simple system that keeps the farm healthy and connected to itself. Over time, we hope to make this compost available locally for our neighbors to enjoy.
We believe that good farming comes from staying involved and using tools that support the work instead of replacing it. Robotic milking allows cows to be milked when they are ready, which keeps them comfortable and helps us monitor their health closely.
At the same time, calves are born by hand and cared for by people who know them. Technology has a place here, but attention and presence matter most.
We are so excited about the creamery. Here we take our artisanal approach to cheese, ice cream, and yogurt—small batches, careful attention, and the kind of care that you can taste.
Small-batch cheese handmade by our Ballerina Farm Formagers with pasterized milk from cows at Ballerina Farm and goats from a partner local Utah farm.
New cheeses: Goat Cheese with Vegetable Ash, Goat Cheese with Smoked Paprika, Brie-Style Cheese, Brie-Style Cheese with Truffles, Feta Cheese in Brine
Our dairy and creamery productions are still growing, and so are we. We are learning every day, finding what works, and making intentional changes. Good food takes time, and we are committed to doing this work at a pace that feels right. We can’t wait to share our delicious dairy products with you!
