Lemon Poppyseed Protein Balls

Prepped in just a few minutes, these Lemon Poppyseed Protein Balls are bright, fresh, and (of course) good for you. This recipe uses our new Lemon Poppyseed Farmer Protein, and can be kept in the fridge for a quick snack or easy breakfast. If you'd like, swap the almonds for cashews or walnuts—just don't skip the fresh lemon zest or white chocolate, which make each bite taste balanced and just a little bit indulgent. 

Yields: 12 to 14 protein balls | Prep Time: 15 minutes

INGREDIENTS

  • ½ cup (50 grams) unsweetened shredded coconut
  • ½ cup (50 grams) whole almonds
  • 1 cup (100 grams) whole rolled oats
  • 1 tablespoon (8 grams) ground flaxseed
  • 1 lemon, zested
  • ¼ teaspoon kosher salt
  • ¼ cup plus 3 tablespoons (150 grams) raw honey
  • 1 ½ scoops (60 grams) Lemon Poppyseed Farmer Protein
  • 1 tablespoon (8 grams) poppyseeds
  • ½ cup (85 grams) white chocolate
  • Flakey salt (optional), for serving

DIRECTIONS

  1. To a food processor, add the coconut, almonds, oats, flaxseed, zest of the lemon (save the rest of the lemon for another use), and the salt. Blend for about 2 minutes, or until the mixture is finely ground and beginning to clump around the sides of the food processor.
  2. Add the honey and Farmer Protein to the oat mixture and blend for another 1 minute until everything is well blended and sticking together. 
  3. Finally, add the poppyseeds and white chocolate. Pulse to roughly chop the white chocolate and incorporate the poppyseeds.
  4. Scoop into 2-tablespoon-sized rounds and roll into balls and sprinkle with flakey salt (if using). Store in an airtight container in the fridge for up to one week.
