Bacon Chocolate Onion Jam

Bone in beef rib with onion jam on top served with roasted potatoes and herb sauce

Ingredients

Method

  1. In a medium size pan, cook bacon until it is about 75 percent crispy.
  2. Add red onions and cook until bacon is crispy
  3. Add Garlic and cook for 1 minute.
  4. Deglaze with red wine and reduce until thick
  5. Add remaining ingredients and simmer for 20 minutes, most of the liquid should be reduced.
  6. Bon Appétit!
