From Scratch Peanut Butter & Jelly Sandwich - Ballerina Farm

Peanut Butter

Ingredients

  • One to two cups roasted, unsalted peanuts
  • One pinch Ballerina Farm Coarse Grey French Salt
  • Optional: one to two tablespoons powdered sugar

Method

  1. Place peanuts and salt in a blender or food processor.
  2. Blend until smooth, stopping to scrape down the sides regularly so everything mixes evenly.
  3. For a sweeter flavor, add powdered sugar to taste.

Raspberry Jam

Ingredients

  • Ten ounces frozen raspberries
  • Five ounces sugar
  • One lemon, zested and half of it juiced

Method

  1. Place all ingredients in a saucepan and bring to a gentle simmer.
  2. Cook until thickened and reduced, about ten to fifteen minutes.
  3. To test if the jam is set, spoon a small amount onto a chilled plate and place it in the freezer for one minute. Run your finger through the center: If the jam wrinkles or holds a furrow, it is ready. If it runs back together, cook a few minutes longer and test again.

To Assemble

  1. Spread one tablespoon of peanut butter and one tablespoon of raspberry jam in the center of two slices of your favorite bread.
  2. Remove the crusts if desired, and press with a sandwich cutter to seal the filling inside.
  3. Pack the sandwich up to be enjoyed!
