Ingredients
- 1 LB Spinach Chopped
- 12 oz Feta Cheese Crumbled
- Fresh Herbs (oregano, mint, basil, sage, chives)
- 2 eggs
- Dash of salt
- 1 package fillo dough
- Butter for pan
- Olive oil for pan and fillo dough
Directions
Preheat oven to 375 F
Chops spinach and herbs finely and put in bowl
Add eggs and feta
Mix well with spoon or hand
Add dash of salt as desired
Butter baking dish (I used cast iron)
Add 5-7 sheets of fillo dough and sprinkle olive oil
Add ½ spinach mixture and layer more fillo dough on top
Sprinkle olive oil on fillo
Add rest of spinach mixture and layer again with fillo dough
Cut lines into spanakopita and bake for 45-50 minutes checking along the way!
