Chicken Alfredo with Homemade Noodles
- 1/2 cup butter
- 2 cups heavy cream
- 2 cloves of garlic minced
- 3 cups freshly grated Parmesan cheese
- 1/2 cup fresh parsley chopped
- 3 cups cooked chicken, diced
- 4 cups all purpose flour
- 6 large eggs
- 1 teaspoon salt
- 1 to 2 tablespoons olive oil
In a saucepan over medium heat, Sauté garlic.
Add the heavy cream and cook for a few minutes until simmering.
Next, add the cheese and stir until incorporated then remove from heat.
Add the fresh parsley, cooked chicken and serve immediately on top of noodles.
In a bowl make a well with the flour. In the center add the oil, salt and eggs.
With a fork, start by whisking the eggs and bringing the flour from the outside, in.
Knead the dough for 10 minutes till it forms into a firm ball.
Divide into 8 even pieces and place in the fridge to rest for 30 minutes.
Take dough out and roll each piece into long “slabs” and put through the pasta attachments. *(You can even roll them out completely by hand and cut the pasta. Using an attachment helps it not be too thick and more uniform:)
