Pesto for Grilled Mozzarella Sandwiches
Today we made some fresh mozzarella, pesto and sourdough to make the ultimate grilled cheese sandwich.
After making the sourdough and mozzarella, it was time to make the pesto.
- 2 cups fresh basil
- ¼ cup sharp white cheddar cheese
- ½ c extra-virgin olive oil ¼ cup pine nuts
- 3 cloves garlic peeled ¼ tsp salt Ballerina Farm seasoning to taste
Juice from 1/2 of lemon
Put all the ingredients in a blender and blend until smooth.
Add more olive oil if necessary.
For the sandwiches! Sourdough bread, fresh mozzarella and then your pesto. Just sear them in a hot skillet with butter until the cheese is melted... then ENJOY!💫
